The Perfect Cut
We have all had wonderful ex-dairy beef in Galica or the Basque country and even here with British ex-dairy beef becoming more and more popular on menus across the country. We are probably less used to seeing meat with this provenance in the context of cured meat so in keeping with our ethos of only using ex-breeding animals for our range we decided to put it to the test.
We opted for the salmon cut or eye of round from the topside which is a very lean cut of meat. If eaten as a steak it would be deliciously tasty but texturally challenging but given the careful treatment of time all our of products get this really comes into its own. A delicate blend of spices including star anise, coriander seed and green cardamon have been used to enhance the wonderful flavour from this beef. We have not changed this recipe since we launched the company in 2017 but maybe this reworked classic is due a makeover!!
