The Perfect Cut
The loin is arguably the most delicate cut of pork in terms of flavour and as such deserves a very light touch when it comes to spicing. We use a mixture of spices including mace, black pepper and star anise to enhance the natural, sweet nutty flavour of the pork.
We have also left a generous fat cap on during the butchery phase as this buttery fat allows the flavour molecules to really cling to your palate bringing the most our of this delicate but delicious cut.
