This salami is based on a traditional pickling spice recipe from sub-continental Asia going back centuries – based on the word ‘Achar’ meaning a pickled article of food. We have blended this spice mix used for preservation with preservation techniques from Southern Europe, also going back centuries, to create something new, relevant, and exciting today.
Loosely based on a traditional fennel salami or finocchiona, we have included mace, fenugreek, and nigella to add depth and savoury complexity to underpin the delicious flavour of the pork we use. Delicious on its own or an ingredient making up a complete dish
