6 Burford Brown eggs
Pack of 6 khobez flatbread
1 red onion Dried
Jar of good quality pitted green olives
100g Tempus No.8
100g pine nuts
Large bunch of fresh basil
2 at a push!
Set grill to medium.
Chop a handful of olives lengthways and reserve.
Peel and thinly slice half a red onion and reserve.
Place khobez on baking tray.
Generously dress the khobez with small pieces of No.8, pine nuts, green olive and red onion.
Carefully crack the egg in the centre bread and then sprinkle with oregano.
Place under the grill and cook until the egg sets and the no.8 begins to melt (keep an eye on it as it will burn quickly).
Once cooked, dress generously with hand torn basil.
Cut with a pizza wheel and serve with a dressed rocket salad.
