This is a classic salad invented by one of our co-founders Dhruv Baker. Whilst some of our products are more kitchen staples, such as pancetta and lardo, here our unique cured pork loin special is the star of the show. It is perfectly matched with flat white peaches which are coming into season any time now, then paired with creamy mozzarella and herbs it really is a salad of elegance. As always, paired with something cold and white in the glass next to you, it really does deliver.
Tempus Spiced Loin with flat white peaches, mozzarella, basil and chive dressing.
Ingredients (Serves 4)

6 flat white peaches

20 slices tempus spiced loin
-
2 good quality mozzarella
-
Small bunch fresh Basil
-
Small bunch Chives
-
75ml Olive oil
-
2 lemons
-
Salt and pepper
-
Fresh crusty bread to serve
Method

Stone and quarter the peaches.

Cut the burrata or mozzarella into quarters

Mix the olive oil with the juice of 1 lemon and add salt and pepper to taste.

Finely chop the chives and add to the dressing

Arrange the peaches, loin, mozzarella and basil leaves on 4 plates, spoon over the chive dressing and serve with fresh crusty bread.
